This dish is one of my favorites. It is a perfect addition to summer barbecues, picnics, and potlucks.
I try to make it a day ahead of time because it enhances the flavor and allows the toughness in the kale to break down a bit.
Yummy Yummy Kale Salad
Prep the kale:
Wash one large bunch of kale.
Remove ribs and tough stems. Thinly slice leaves, or just tear them into small pieces into a large bowl.
In a separate small bowl whisk together:
5 tbsp lemon juice
4 tbsp mayonnaise
3 tbsp olive oil
2 tbsp brown or Dijon mustard
Pour mixture over the kale. Add 1/4 tsp sea salt over the everything. Now stir the salad to get it evenly coated. My strategy with kale is bruise it a bit with a wooden spoon, do this if you like your salad less tough.
Sauté 1 cup panko bread crumbs, with four cloves minced garlic, and 1/8 tsp crushed red pepper flake in olive oil over low heat. Stir frequently until bread crumbs become golden brown.
I add this topping just before I serve the salad.
Other delicious toppings for Yummy Yummy Kale Salad:
1 small apple (chopped), 1/2 cup walnuts (chopped), 5 ounces crumbled goat cheese, 1/2 cup dried cranberries.
