These biscuits are a favorite in our house. I love this recipe because it is really easy and quick to make.
Also, I like it because almost biscuits recipes require buttermilk and I never happen to have buttermilk when I decide I want to make biscuits. I know there is a trick where you can put lemon juice or something into regular milk and magically turn it into buttermilk, but I have yet to try that.
These biscuits are delicious and cheesy. You will not have leftovers, even though this recipe makes a huge batch.
Cheddar Parmesan Biscuits
4 cups flour
2 tbsp baking powder
2 tsp salt
4 tbsp cold butter
1 ½ cups milk
½ cup grated parmesan cheese
½-1 cup grated sharp cheddar cheese
In a large bowl combine all the dry ingredients: flour, baking soda, and salt.
Add the butter to the flour mixture. I like to grate the butter in using a cheese grater and then mix it with my hands. At this point the dough will be crumbly, but if you pinch it, it should sort of stick together.
Stir in the milk.
Add the cheese and stir it some more.
Form the dough into 12 big biscuits or 24 smaller biscuits on an un-greased cookie sheet.
Bake at 350’F for 15 minutes for small biscuits and 20 minutes for big biscuits, or until golden on the bottom.
